Chicken rice porridge, also known as Chicken Arroz Caldo, is a comforting and flavorful dish that's perfect for cold days or when you're feeling under the weather. Here's a simple recipe to make Chicken Arroz Caldo:


Ingredients:

  • 1 cup jasmine rice
  • 1 lb bone-in chicken thighs or breasts, skin removed
  • 6 cups chicken broth
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and minced
  • Fish sauce or salt, to taste
  • Ground black pepper, to taste
  • Garnishes: sliced green onions, fried garlic, calamansi or lemon wedges, hard-boiled eggs (optional)


Instructions:

  • Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
  • In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.
  • Add the minced garlic and ginger to the pot and cook for another 1-2 minutes, or until fragrant.
  • Add the chicken pieces to the pot and cook until lightly browned on all sides, about 5-6 minutes.
  • Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let the soup simmer, partially covered, for about 20-25 minutes, or until the chicken is fully cooked and tender.
  • Remove the chicken pieces from the pot and shred the meat using two forks. Discard the bones and return the shredded chicken meat to the pot.
  • Stir in the rinsed jasmine rice and continue to simmer the soup for another 15-20 minutes, or until the rice is fully cooked and the soup has thickened to your desired consistency. Stir occasionally to prevent the rice from sticking to the bottom of the pot.
  • Season the Chicken Arroz Caldo with fish sauce or salt and ground black pepper, adjusting the seasoning according to your taste preferences.
  • Ladle the Chicken Arroz Caldo into bowls and garnish with sliced green onions, fried garlic, and calamansi or lemon wedges. You can also serve the porridge with hard-boiled eggs on the side, if desired.
  • Serve the Chicken Arroz Caldo hot and enjoy its comforting and nourishing flavors!
