Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • Pinch of salt
  • 2 tablespoons melted butter (optional, for flavor)
  • Additional butter or oil for greasing the pan


Instructions:


Prepare the Batter:

  • In a bowl, whisk together the flour, eggs, and milk until you have a smooth batter. Add a pinch of salt and melted butter (if using), and whisk again until well combined. Let the batter rest for about 30 minutes. This allows the flour to absorb the liquid and gives the crêpes a better texture.

Heat the Pan:

  • Heat a non-stick skillet or crêpe pan over medium heat. Add a small amount of butter or oil to coat the surface.

Cook the Crêpes:

  • Pour a small amount of batter into the center of the hot pan, swirling it around to spread it thinly. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly browned.

Flip and Cook the Other Side:

  • Use a spatula to carefully flip the crêpe and cook the other side for an additional 1-2 minutes. The crêpe should have a golden color.

Repeat:

  • Repeat the process with the remaining batter. Stack the cooked crêpes on a plate, covering them with a kitchen towel to keep them warm.

Serve:

  • Serve the crêpes with your choice of fillings. Popular sweet fillings include Nutella, fresh fruit, whipped cream, or jam. For savory options, you can fill them with cheese, ham, sautéed vegetables, or eggs.
