Pasta al Pomodoro

By Food E Fare

Pasta al pomodoro is a classic Italian pasta dish that features a simple tomato-based sauce. The name "pasta al pomodoro" translates to "pasta with tomatoes" in English. It is a popular and straightforward recipe, known for its fresh and vibrant flavors. The dish is a staple in Italian cuisine and is often enjoyed for its simplicity and comforting taste. Here's a basic recipe for Pasta al pomodoro:

Ingredients:

  • 1 pound (about 450g) pasta (common choices include spaghetti, fettuccine, or penne)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes or tomato puree
  • Salt and black pepper to taste
  • Fresh basil leaves, torn or chopped
  • Grated Parmesan cheese for serving

Instructions:

Cook the Pasta:

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve about a cup of pasta cooking water before draining.

Prepare the Sauce:

  • In a large skillet or saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, being careful not to let it brown.
  • Pour in the crushed tomatoes or tomato puree. Season with salt and black pepper to taste. Bring the sauce to a simmer.

Simmer the Sauce:

  • Allow the sauce to simmer for about 15-20 minutes, stirring occasionally. This helps the flavors meld, and the sauce thickens.

Add Basil:

  • Stir in torn or chopped fresh basil leaves just before serving. Basil adds a fresh and aromatic note to the dish.

Combine with Pasta:

  • Add the cooked pasta to the tomato sauce, tossing to coat the pasta evenly. If the sauce is too thick, you can add some of the reserved pasta cooking water to reach the desired consistency.

Serve:

  • Serve the Pasta al pomodoro hot, garnished with additional fresh basil and grated Parmesan cheese.

Tips:

While the basic recipe is straightforward, variations can include additional ingredients such as red pepper flakes, olives, or capers for added flavor complexity. It's a versatile and timeless dish that is loved by many for its delicious and uncomplicated nature.
