Eggs Benedict is a classic breakfast or brunch dish consisting of poached eggs served on top of toasted English muffins, topped with Canadian bacon or ham, and drizzled with hollandaise sauce. Here's how to make it:

Ingredients:

  • 4 large eggs
  • 2 English muffins, split and toasted
  • 4 slices Canadian bacon or ham
  • Salt and pepper to taste
  • Chopped fresh chives or parsley for garnish (optional)


For the hollandaise sauce:

  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter, melted
  • Pinch of cayenne pepper
  • Pinch of salt


Instructions:

  1. To make the hollandaise sauce, fill a saucepan with a couple of inches of water and bring it to a simmer over medium heat. Place a heatproof bowl over the saucepan, ensuring the bottom of the bowl doesn't touch the water.
  2. In the bowl, whisk together the egg yolks and lemon juice until well combined.
  3. Gradually drizzle in the melted butter while whisking constantly, until the sauce is smooth and thickened.
  4. Remove the bowl from the heat and season the hollandaise sauce with a pinch of cayenne pepper and salt. Keep warm while you prepare the rest of the dish.
  5. To poach the eggs, fill a large saucepan with about 2-3 inches of water and bring it to a gentle simmer over medium heat. Add a splash of vinegar to the water (this helps the eggs to hold their shape).
  6. Crack each egg into a small bowl or ramekin. Using a spoon, create a gentle whirlpool in the simmering water, then carefully slide the eggs, one at a time, into the center of the whirlpool. Poach the eggs for about 3-4 minutes, until the whites are set but the yolks are still runny.
  7. While the eggs are poaching, toast the English muffins until golden brown.
  8. To assemble the Eggs Benedict, place a slice of Canadian bacon or ham on each toasted English muffin half.
  9. Using a slotted spoon, carefully remove the poached eggs from the water and place one on top of each slice of Canadian bacon.
  10. Spoon hollandaise sauce generously over each poached egg.
  11. Garnish with chopped fresh chives or parsley, if desired, and season with salt and pepper to taste.
  12. Serve immediately and enjoy your delicious Eggs Benedict.
