Kathi rolls, also known as Kathi kebabs or Frankie rolls, are a popular street food originating from Kolkata, India. These rolls consist of spiced and grilled meat, along with various accompaniments, wrapped in a thin flatbread. Here's a basic recipe for making chicken kathi rolls:


Ingredients:


For Chicken Marinade:

  • 1 pound (about 500g) boneless chicken, cut into thin strips
  • 2 tablespoons yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil

For the Rolls:

  • Thin flatbreads or rotis (you can use store-bought or make them at home)
  • Sliced onions
  • Sliced tomatoes
  • Chopped coriander leaves (cilantro)
  • Mint chutney
  • Lemon wedges


Instructions:


Marinating the Chicken:

  • In a bowl, mix together yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and oil to form a marinade.
  • Add the chicken strips to the marinade, ensuring they are well-coated. Marinate for at least 30 minutes to an hour.

Grilling the Chicken:

  • Thread the marinated chicken strips onto skewers or grill them on a stovetop grill pan until they are cooked through and have a slightly charred appearance.

Assembling the Rolls:

  • Heat the flatbreads or rotis on a griddle or in a pan.
  • Place a portion of the grilled chicken in the center of the flatbread.
  • Add sliced onions, tomatoes, and chopped coriander leaves on top of the chicken.

Rolling:

  • Drizzle some mint chutney over the filling.
  • Roll the flatbread tightly to form a roll or wrap. You can use foil or parchment paper to hold the roll together.

Serving:

  • Serve the kathi rolls hot, optionally garnished with additional mint chutney and lemon wedges.

Variations:

  • You can customize the rolls with additional toppings like shredded lettuce, cucumber, or grated cheese.
  • For a vegetarian version, you can use paneer (Indian cottage cheese) or mixed vegetables as the filling.
