  • 500g lamb, diced into bite-sized pieces
  • 2 tablespoons vegetable oil or ghee
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 1 cup plain yogurt
  • 2 tablespoons tomato paste
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cloves
  • 1 teaspoon chili powder (adjust to taste)
  • Salt to taste
  • Fresh cilantro leaves for garnish
  • Cooked rice or naan bread for serving


  • Heat the vegetable oil or ghee in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes.
  • Add the minced garlic and grated ginger to the skillet and cook for another 1-2 minutes until fragrant.
  • Add the diced lamb to the skillet and cook until browned on all sides, about 5-7 minutes.
  • Stir in the chopped tomatoes, tomato paste, and plain yogurt. Mix well to combine.
  • Add the ground coriander, ground cumin, ground turmeric, paprika, ground cinnamon, ground cardamom, ground cloves, and chili powder to the skillet. Stir to evenly coat the lamb with the spices.
  • Reduce the heat to low, cover the skillet, and let the curry simmer gently for about 1-1.5 hours, stirring occasionally, until the lamb is tender and the sauce has thickened.
  • Season the curry with salt to taste.
  • Garnish the lamb rogan josh curry with fresh cilantro leaves before serving.
  • Serve hot with cooked rice or naan bread on the side.
