Kadai Chicken is a flavorful Indian dish made with chicken cooked in a spiced tomato-based gravy, typically in a kadai or wok. Here's a basic recipe for making Kadai Chicken:


For Marinating Chicken:

  • 500 grams chicken, cut into pieces
  • 1 cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste

For Kadai Chicken Masala:

  • 2 tablespoons oil
  • 1 large onion, finely sliced
  • 2 tomatoes, chopped
  • 2 green bell peppers, cut into strips
  • 1 tablespoon ginger-garlic paste
  • 2-3 green chilies, chopped
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • 1 teaspoon kasuri methi (dried fenugreek leaves)
  • Fresh coriander leaves for garnish
  • Salt to taste


Marinate Chicken:

  • In a bowl, combine chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Mix well and let it marinate for at least 30 minutes.

Prepare Kadai Chicken:

  • Heat oil in a kadai or wok. Add finely sliced onions and sauté until they turn golden brown.

Add Aromatics:

  • Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.

Add Tomatoes:

  • Add chopped tomatoes. Cook until the tomatoes are soft and the oil starts separating from the masala.

Add Spices:

  • Add coriander powder, cumin powder, turmeric powder, red chili powder, and garam masala. Mix well.

Cook Chicken:

  • Add the marinated chicken to the masala. Cook until the chicken is browned.

Add Bell Peppers:

  • Add the bell pepper strips to the kadai. Stir well and cook for a few minutes until the bell peppers are slightly tender.

Crushed Kasuri Methi:

  • Crush kasuri methi between your palms and add it to the kadai. This adds a distinct flavor to the dish.


  • Simmer the Kadai Chicken on low heat until the chicken is fully cooked and the flavors are well blended.


  • Garnish with fresh coriander leaves.


  • Serve hot Kadai Chicken with naan, roti, or rice.
