Gajar ka Halwa, also known as Carrot Halwa, is a popular Indian dessert made with grated carrots, milk, sugar, and ghee (clarified butter). It's flavored with cardamom and garnished with nuts. Here's a simple recipe for making Gajar ka Halwa:

Ingredients:

  • 500 grams carrots, peeled and grated
  • 1 liter full-fat milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 cup ghee (clarified butter)
  • 1/2 teaspoon cardamom powder
  • A handful of chopped nuts (almonds, cashews, and pistachios)
  • Raisins for garnish (optional)


Instructions:


Grate Carrots:

  • Peel and grate the carrots. You can use a box grater or a food processor for this.

Cook Carrots:

  • In a heavy-bottomed pan, add the grated carrots and milk.
  • Cook the carrots in milk on medium heat, stirring frequently to prevent sticking. Continue cooking until the carrots are soft and the milk has reduced considerably. This can take about 30-40 minutes.

Add Sugar:

  • Add sugar to the carrots and milk mixture. Stir well.

Cook Further:

  • Continue cooking on low to medium heat until the sugar dissolves and the mixture thickens. The halwa will start leaving the sides of the pan.

Add Ghee:

  • Add ghee to the halwa and mix well. The ghee adds richness and enhances the flavor.

Flavor with Cardamom:

  • Add cardamom powder for flavor. Mix it into the halwa.

Garnish with Nuts:

  • In a separate pan, lightly roast the chopped nuts in a little ghee until they are golden brown. Add the nuts and raisins to the halwa. Keep some aside for garnish.

Cook Further:

  • Cook the halwa for a few more minutes until it reaches the desired consistency. It should be thick and glossy.

Serve:

  • Gajar ka Halwa can be served warm or at room temperature.
  • Garnish with the reserved nuts before serving.
