  • Start by dissolving sugar in water to create a sugar syrup. The ratio of sugar to water can vary, but it's typically around 2 parts sugar to 1 part water. Heat the mixture in a saucepan over medium heat, stirring continuously until the sugar is completely dissolved.

Boiling the Syrup:

  • Once the sugar is dissolved, increase the heat and bring the syrup to a boil. Use a candy thermometer to monitor the temperature. The syrup needs to reach the "hard crack" stage, which is around 300°F (150°C). At this temperature, the syrup will harden quickly when dropped into cold water.

Adding Color (Optional):

  • If desired, add food coloring to the syrup to achieve the desired color for the kompeito candies. Stir the coloring into the syrup until it's evenly distributed.

Dropping the Syrup:

  • Once the syrup reaches the proper temperature and color, it's time to create the individual candies. Using a small spoon or dropper, carefully drop small droplets of the syrup onto a flat, greased surface. The droplets should be spaced apart to prevent them from sticking together.

Cooling and Shaping:

  • Allow the droplets of syrup to cool and harden completely. As they cool, they will take on a crystalline appearance, resembling tiny jewels. If necessary, you can gently shape and separate the candies with your fingers or a utensil.

Storage:

  • Once the kompeito candies are completely cooled and hardened, transfer them to an airtight container for storage. They can be enjoyed immediately or saved for later.
