Ingredients:


For Sticky Rice:

  • 1 cup glutinous rice
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • Sesame seeds (optional, for garnish)

For Coconut Sauce:

  • 1 cup coconut milk
  • 2 tablespoons sugar
  • 1/4 teaspoon salt

Instructions:


Sticky Rice:


Soak the Rice:

  • Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.

Drain and Steam:

  • After soaking, drain the rice. Place the rice in a steamer lined with cheesecloth or a clean kitchen towel. Steam the rice for 25-30 minutes or until it becomes tender and sticky.

Prepare Coconut Mixture:

  • While the rice is steaming, mix 1 cup of coconut milk, 1/2 cup of sugar, and 1/2 teaspoon of salt in a saucepan. Heat over medium heat until the sugar dissolves. Set aside.

Combine Rice and Coconut Mixture:

  • Once the rice is cooked, transfer it to a large bowl. Pour the coconut mixture over the rice while it's still hot. Stir to coat the rice evenly. Let it sit for 15-20 minutes to allow the flavors to meld.

Coconut Sauce:

  • In another saucepan, combine 1 cup of coconut milk, 2 tablespoons of sugar, and 1/4 teaspoon of salt. Heat over medium heat until the sugar dissolves. Set aside.

Serving:


Assemble the Dish:

  • Mold a portion of the sticky rice into a small cup or bowl. Invert it onto a serving plate to create a neat mound of sticky rice.

Add Mango Slices:

  • Arrange slices of ripe mango on the side or on top of the sticky rice.

Drizzle with Coconut Sauce:

  • Drizzle the coconut sauce over the sticky rice and mango slices. Ensure a generous amount of sauce covers the dessert.

Optional Garnish:

  • Optionally, sprinkle sesame seeds over the top for added texture.

Serve:

  • Serve Khao Niao Mamuang immediately while it's still warm.
