Rasmalai is a popular Indian dessert made with flattened, soft paneer (Indian cottage cheese) discs soaked in saffron and cardamom-flavored milk. Here's a basic recipe for making Rasmalai:


Ingredients:


For Paneer (Cottage Cheese) Balls:

  • 1 liter full-fat milk
  • 2 tablespoons lemon juice or white vinegar
  • Ice water for rinsing

For Sugar Syrup:

  • 1 cup sugar
  • 4 cups water

For Rabri (Milk Mixture):

  • 1 liter full-fat milk
  • 1/2 cup sugar
  • A pinch of saffron strands (soaked in warm milk)
  • 1/2 teaspoon cardamom powder
  • Chopped nuts for garnish (almonds, pistachios)


Instructions:


Prepare Paneer:

  • Boil 1 liter of milk in a pan. Once it boils, add lemon juice or white vinegar slowly while stirring until the milk curdles.
  • Drain the whey using a muslin cloth or a fine sieve.
  • Rinse the paneer under cold running water to remove any lemon juice residue.
  • Squeeze out excess water and hang the paneer for about 30 minutes to remove moisture.
  • Knead the paneer until it becomes smooth. Roll it into small balls and flatten them slightly.

Prepare Sugar Syrup:

  • In a wide pan, combine sugar and water to make the sugar syrup.
  • Bring it to a boil and add the flattened paneer discs.
  • Simmer for about 10-12 minutes until the paneer discs are cooked and have absorbed the sugar syrup. They will puff up a bit.

Prepare Rabri (Milk Mixture):

  • Boil 1 liter of milk in a separate pan. Reduce the heat to low and let it simmer, stirring occasionally.
  • Add sugar, saffron-soaked milk, and cardamom powder to the simmering milk.
  • Continue simmering until the milk reduces to half its original quantity, stirring occasionally. This mixture is known as rabri.

Assemble Rasmalai:

  • Once the paneer discs are cooked and the rabri is ready, gently press the sugar syrup from the paneer discs and place them in the rabri.
  • Allow the Rasmalai to cool in the refrigerator for a few hours to let the flavors meld.

Garnish and Serve:

  • Garnish Rasmalai with chopped nuts before serving.
