Ingredients:


For the Chocolate Pastry Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 tablespoons ice water (as needed)


For the Chocolate Ganache Filling:

  • 8 ounces dark chocolate, finely chopped
  • 1 cup heavy cream


For the Cherry Topping:

  • Fresh cherries, pitted and halved (or use preserved cherries)


Instructions:

  • Preheat your oven to 350°F (175°C).
  • In a food processor, combine the flour, cocoa powder, cold cubed butter, and sugar. Pulse until the mixture resembles coarse crumbs.
  • Add the egg yolk and pulse again. Gradually add ice water, one tablespoon at a time, until the dough comes together. Be careful not to overmix.
  • Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
  • Roll out the chilled dough on a floured surface and fit it into a tart pan with a removable bottom. Trim any excess dough.
  • Prick the bottom of the crust with a fork and line it with parchment paper. Fill the crust with pie weights or dried beans.
  • Bake the crust in the preheated oven for about 15 minutes. Remove the parchment paper and weights, and bake for an additional 5-7 minutes, or until the crust is set. Allow it to cool completely.
  • For the chocolate ganache filling, heat the heavy cream in a saucepan until it just starts to simmer. Pour the hot cream over the finely chopped chocolate and let it sit for a minute. Stir until smooth and glossy. Pour the chocolate ganache into the cooled tart crust.
  • Refrigerate the tart to allow the ganache to set, usually for about 1-2 hours.
  • Once the chocolate is set, arrange the halved cherries on top of the tart.
  • Optionally, you can brush the cherries with a light glaze made from warmed fruit preserves or apricot jelly for a glossy finish.
  • Slice and serve the chocolate cherry tart.
