Kulfi is a popular Indian frozen dessert that is often described as Indian ice cream. It is traditionally made by reducing sweetened and flavored milk to a thick consistency before freezing. Here's a basic recipe for making Kulfi:

Ingredients:

  • 1 liter full-fat milk
  • 1 cup sugar (adjust to taste)
  • 1/2 cup khoya (reduced milk solids) or condensed milk
  • 1/2 cup mixed nuts (almonds, pistachios, cashews), finely chopped
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • Kulfi molds or small cups for freezing
  • Ice cream sticks or wooden skewers


Instructions:


Preparing the Milk Mixture:

  • In a heavy-bottomed pan, bring the milk to a boil.
  • Reduce the heat to low and simmer the milk, stirring occasionally to prevent sticking, until it reduces to half its volume. This can take 30-45 minutes.

Adding Sweeteners and Flavor:

  • Add sugar to the reduced milk and stir until the sugar dissolves.
  • Add khoya or condensed milk to the mixture. Continue to simmer and stir until the mixture thickens further.

Adding Nuts and Flavorings:

  • Add finely chopped nuts, cardamom powder, and saffron strands (if using). Mix well.

Cool the Mixture:

  • Allow the mixture to cool to room temperature. Stir occasionally to prevent a skin from forming.

Filling Kulfi Molds:

  • Pour the cooled mixture into kulfi molds or small cups. If using cups, cover them with aluminum foil.

Freezing:

  • Insert ice cream sticks or wooden skewers into the center of each kulfi mold or cup.

Freeze Until Solid:

  • Place the kulfi molds or cups in the freezer and freeze until the kulfi is completely set and solid. This usually takes at least 6-8 hours or overnight.

Serving:

  • To serve, dip the kulfi molds briefly in warm water to loosen the kulfi. Gently pull the stick to remove the kulfi from the mold.

Garnish (Optional):

  • Optionally, garnish with additional chopped nuts before serving.
