Ingredients:

  • 1 head of cauliflower, chopped into florets
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)


Instructions:


Caramelize the Onions:

  • In a large pot or Dutch oven, heat olive oil or butter over medium heat. Add thinly sliced onions and cook, stirring occasionally, until the onions become soft and caramelized. This process may take about 20-30 minutes.

Cook Garlic and Cauliflower:

  • Add minced garlic to the caramelized onions and cook for another minute until fragrant. Add the cauliflower florets to the pot and sauté for a few minutes to enhance the flavors.

Add Broth:

  • Pour in the vegetable or chicken broth, making sure it covers the cauliflower. Bring the mixture to a boil, then reduce the heat and let it simmer until the cauliflower is tender.

Blend the Soup:

Add Milk or Cream:
