Crème de Champignons, or cream of mushroom soup, is a popular soup made with mushrooms, onions, garlic, broth, and cream. The mushrooms are typically sautéed and then blended with the other ingredients to create a smooth and creamy soup. The addition of cream gives it a rich and velvety texture.

Here's a simple recipe for Cream of Mushroom Soup:

Ingredients:

  • 1 pound (about 450g) mushrooms, cleaned and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onions and garlic, and sauté until softened.
  2. Add the sliced mushrooms to the pot and cook until they release their moisture and become tender.
  3. Sprinkle the flour over the mushrooms and stir well to combine. Cook for a few minutes to eliminate the raw taste of the flour.
  4. Gradually pour in the broth while stirring continuously to avoid lumps. Bring the mixture to a simmer.
  5. Reduce the heat to low and add the heavy cream. Simmer for about 10-15 minutes, allowing the flavors to meld.
  6. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  7. Season the soup with salt and pepper to taste. Garnish with fresh thyme or parsley if desired.
  8. Serve the cream of mushroom soup hot, and enjoy!
