Chicken clear soup, also known as chicken consommé, is a light and flavorful broth made by simmering chicken and aromatic vegetables until the flavors are extracted. The goal is to create a clear and consommé-like liquid, which is different from heartier and more opaque chicken soups.

Here's a basic recipe for making chicken clear soup:


Ingredients:

  • 1 whole chicken or chicken bones and carcass
  • Water (enough to cover the chicken)
  • 1 onion, peeled and halved
  • 2 carrots, peeled and halved
  • 2 celery stalks, halved
  • 2 cloves garlic, crushed
  • Fresh parsley
  • Salt and pepper to taste


Instructions:

  • Rinse the chicken under cold water. Place the chicken in a large pot and cover it with enough water to submerge the chicken.
  • Bring the water to a boil over medium-high heat. As it starts to boil, skim off any foam or impurities that rise to the surface.
  • Add the halved onion, carrots, celery, crushed garlic, and a few sprigs of fresh parsley to the pot.
  • Reduce the heat to a simmer and let the soup cook uncovered for about 1.5 to 2 hours. The low simmer helps clarify the soup and intensify the flavors.
  • After simmering, strain the soup through a fine mesh sieve or cheesecloth to remove the solids, resulting in a clear broth.
  • Season the chicken clear soup with salt and pepper to taste.
  • If desired, you can serve the clear soup as is or enhance it with additional ingredients such as finely chopped fresh herbs, cooked rice, or small pasta.
