Pani Puri, also known as Golgappa or Puchka in different regions of India, is a popular street food snack. It consists of hollow, crispy puris filled with a mixture of spicy and tangy flavored water (pani), boiled potatoes, chickpeas, tamarind chutney, and various spices. Here's a basic recipe for making Pani Puri at home:


Ingredients:


For Pani (Spicy Water):

  • 1 cup mint leaves (fresh)
  • 1/2 cup coriander leaves (fresh)
  • 2-3 green chilies (adjust to taste)
  • 1 teaspoon ginger, grated
  • 1 tablespoon tamarind paste
  • 1/2 cup jaggery or sugar
  • 1 teaspoon roasted cumin powder
  • 1/2 teaspoon black salt
  • Salt to taste
  • 3-4 cups cold water

For Filling:

  • Boiled and mashed potatoes
  • Boiled chickpeas
  • Tamarind chutney
  • Chaat masala
  • Optional: Chopped onions, chopped tomatoes, sprouted moong beans

For Puri:

  • Puri shells (available at Indian grocery stores or homemade)


Instructions:


Prepare Pani:

  • In a blender, combine mint leaves, coriander leaves, green chilies, grated ginger, tamarind paste, jaggery (or sugar), roasted cumin powder, black salt, and regular salt.
  • Add cold water and blend until you get a smooth mixture.
  • Strain the mixture to get rid of any solids. Adjust the consistency by adding more water if needed. The pani should be tangy, spicy, and slightly sweet.

Assemble Filling:

  • Mix boiled and mashed potatoes with a pinch of salt and chaat masala.
  • In a separate bowl, mix boiled chickpeas with chaat masala.
  • If you like, you can also prepare a mixture of chopped onions, chopped tomatoes, and sprouted moong beans for additional filling.

Assemble Pani Puri:

  • Carefully make a small hole in the center of each puri shell.
  • Stuff each puri with a small amount of mashed potatoes, chickpeas, and the optional filling mixture.
  • Add a small spoonful of tamarind chutney to each puri.

Serve:

  • Arrange the stuffed puris on a plate.
  • Just before serving, fill each puri with the prepared spicy pani.
  • Serve Pani Puri immediately and enjoy the burst of flavors.
