Ingredients:

  • 2 cups frozen or fresh corn kernels
  • 1/2 cup besan (gram flour or chickpea flour)
  • 2 tablespoons rice flour
  • 1 tablespoon cornstarch
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon chaat masala
  • Salt to taste
  • Water (as needed to make a thick batter)
  • Oil for deep frying


Instructions:


Prepare the Corn:

  • If using frozen corn, thaw and pat dry with a paper towel. If using fresh corn, remove the kernels from the cob.

Make the Batter:

  • In a mixing bowl, combine besan, rice flour, cornstarch, red chili powder, turmeric powder, cumin powder, chaat masala, and salt. Gradually add water while whisking to make a thick, smooth batter.

Coat the Corn:

  • Add the corn kernels to the batter, ensuring they are well-coated.

Heat Oil:

  • Heat oil in a deep fryer or a heavy-bottomed pan to 350°F (175°C).

Fry the Corn:

  • Drop the batter-coated corn kernels into the hot oil in small batches. Fry until they are golden brown and crispy. Use a slotted spoon to remove the fried corn from the oil and place them on a paper towel to absorb excess oil.

Season (Optional):

  • If desired, sprinkle additional chaat masala, red chili powder, or salt over the hot and crispy corn for extra flavor.

Serve:

  • Serve the spicy corn fry immediately as a snack or appetizer. It can be enjoyed on its own or with a side of mint chutney or your favorite dipping sauce.
